Aqua Best supplies to many of the top restaurants in New York City. They have at least 9 different types of oysters but most importantly, take their time with you to explain what makes each special. They have caviar and lobster and beautiful scallops. For any fish you buy, you can ask them to butterfly or filet it for you and they will do it on the spot.
